Bakewell Pudding

The original from Bakewell: puff pastry with a layer of jam under a rich, set almond and egg custard.

This isn't the same as a Bakewell tart. The pudding has a soft, custardy almond filling in puff pastry, with no icing on top.

Serve warm with a spoonful of cream or custard.

Method

  1. Heat the oven to 200°C / 180°C fan. Line a 20cm pie dish with the pastry and spread the jam over the base.
  2. Whisk the yolks, egg and sugar until thick, then stir in the melted butter, ground almonds and almond extract.
  3. Pour the filling over the jam.
  4. Bake for 30–35 minutes until puffed, golden and just set. Serve warm.
Cook's noteChill the pastry case for 15 minutes before filling to stop it shrinking.
