Beef ho fun is a Cantonese classic. The key is a very hot wok to get a smoky flavour.

Separate the noodles gently so they don't break.

Method

  1. Toss the beef with the soy and cornflour.
  2. Stir-fry the beef in 1 tbsp oil for 2 minutes. Remove.
  3. Stir-fry the onion for 2 minutes, then add the noodles and the rest of the oil.
  4. Add the sauces and toss gently. Add the beef, beansprouts and spring onions for 1 minute.
