Crunchy, twice-baked Italian biscuits with almonds. Perfect for dunking in coffee or Vin Santo.

Biscotti are baked first as a log, then sliced and baked again until crisp.

They keep for weeks in an airtight tin.

Method

  1. Heat the oven to 180°C / 160°C fan. Line a baking tray.
  2. Mix the flour, sugar and baking powder. Add the eggs, yolk and vanilla and mix to a dough. Work in the almonds.
  3. Shape into two logs about 5cm wide and bake for 25 minutes.
  4. Cool for 10 minutes, then cut into 1cm diagonal slices.
  5. Lay flat and bake for 10 minutes each side until crisp.
