Brown Windsor soup was a staple of grand Victorian dinners. It's thick, savoury and warming.

It's traditionally blended, but you can leave it chunky if you prefer.

Method

  1. Brown the beef in the butter in a large pan. Add the vegetables and cook for 5 minutes.
  2. Stir in the flour, then the stock, purée and bouquet garni.
  3. Cover and simmer for 1½ hours until the beef is very tender.
  4. Remove the herbs and blend until smooth. Stir in the Madeira and season.
Cook's noteA spoonful of long-grain rice added with the stock thickens it further.
