Cranachan

Toasted oats, whipped cream, whisky, honey and fresh raspberries layered in glasses. Scotland's favourite pudding.

Cranachan was originally made to celebrate the raspberry harvest. It takes minutes to put together once the oats are toasted.

Use the best raspberries you can find, and make it just before serving so the oats stay crunchy.

Method

  1. Toast the oats in a dry frying pan for 4–5 minutes, stirring, until golden and nutty. Leave to cool.
  2. Whip the cream to soft peaks, then fold in the honey, whisky and most of the oats.
  3. Lightly crush half the raspberries with a fork.
  4. Layer the cream, crushed and whole raspberries in 4 glasses. Top with the remaining oats and a drizzle of honey.
Cook's noteFor an alcohol-free version, swap the whisky for a little orange juice.
