Fritto misto means 'mixed fry', and it's a coastal favourite across Italy. The coating is simply seasoned flour.

Fry in small batches so the oil stays hot and everything stays crisp.

Method

  1. Heat the oil in a deep pan to 180°C.
  2. Mix the flour and semolina with a good pinch of salt.
  3. Toss the seafood in the flour, shaking off the excess.
  4. Fry in batches for 2–3 minutes until crisp and golden. Drain on kitchen paper.
  5. Sprinkle with salt and serve with lemon.
