Mince and tatties is Scotland's everyday comfort food. The key is browning the mince well so the gravy has proper depth.

A little oatmeal thickens the sauce the traditional way, but a spoonful of cornflour does the job too.

Method

  1. Brown the mince in the oil in a large pan, breaking it up, until dark and crumbly. Add the onion and carrots and cook for 5 minutes.
  2. Stir in the stock, Worcestershire sauce and oatmeal. Simmer for 35–40 minutes until thick, adding water if needed. Season.
  3. Meanwhile boil the potatoes for 15–20 minutes until tender. Drain and mash with the butter and milk.
  4. Serve the mince spooned beside the mash.
