These buns are turned out after baking so the caramel coats the tops. They're a real weekend treat.

Prepare them the night before and bake in the morning.

Method

  1. Mix the flour, yeast, sugar, egg and milk. Add 60g butter and knead for 10 minutes. Rise for 1 hour.
  2. Melt the caramel butter, sugar and syrup and pour into a 23 x 33cm tin. Scatter with pecans.
  3. Roll the dough into a rectangle, spread with softened butter and sprinkle with brown sugar and cinnamon.
  4. Roll up, cut into 12 and put in the tin. Rise for 45 minutes. Heat the oven to 180°C / 160°C fan.
  5. Bake for 25 minutes. Turn out onto a board while hot.
