Singin' Hinnies

Northumbrian griddle scones studded with currants, cooked in a pan until they sizzle. Best split and buttered while warm.

These little cakes get their name from the singing sound they make on the hot griddle. They're quick to make and need no oven.

Serve them warm with butter, or with jam for an afternoon treat.

Method

  1. Rub the butter and lard into the flour and salt until like breadcrumbs. Stir in the sugar and currants.
  2. Add enough milk to make a soft dough.
  3. Roll out to 1cm thick and cut into 8 rounds.
  4. Cook on a lightly greased griddle or heavy frying pan over a medium-low heat for 6–7 minutes each side until golden and cooked through.
