With only a few ingredients, a BLT is all about quality and balance: really crisp bacon, the ripest tomatoes you can find and cold, crunchy lettuce.

Salt the tomato slices a few minutes ahead to intensify their flavour, and pat them dry so the toast doesn't go soggy. A little garlic in the mayo takes it up a notch.

Method

  1. Season the tomato slices with salt and leave on kitchen paper for 5 minutes.
  2. Fry or grill the bacon until really crisp, then drain on kitchen paper.
  3. Mix the mayonnaise with the garlic and some black pepper. Toast the bread.
  4. Spread the toast with the mayo, then layer up the lettuce, tomato and bacon. Top with the remaining toast, press down and slice in half.
