Despite the name, this is a cake, not a pie. It's the official dessert of Massachusetts.
Make the custard ahead so it's cool and set.

Method
- Heat the oven to 180°C / 160°C fan. Line a 23cm cake tin.
- Whisk the eggs and sugar until thick, fold in the flour, baking powder and butter. Bake for 20–25 minutes. Cool.
- Heat the milk. Whisk the yolks, sugar and cornflour, pour on the milk and whisk back in the pan until thick. Add vanilla and cool.
- Split the cake in half and fill with the custard.
- Heat the cream, pour over the chocolate and stir until smooth. Pour over the cake and chill.
