Chess Pie

A simple Southern pie with a rich, sweet custard filling of butter, sugar, eggs and a little cornmeal.

Chess pie is made from store-cupboard basics. It has a smooth, sweet filling with a crackly top.

A little vinegar balances the sweetness.

Method

  1. Heat the oven to 180°C / 160°C fan. Line a 23cm pie dish with pastry.
  2. Whisk the butter, sugar, eggs, cornmeal, milk, vinegar and vanilla.
  3. Pour into the case and bake for 45–50 minutes until golden and just set.
  4. Cool before slicing.
