Foo yung is a filling omelette cooked in a wok. It's quick and makes the most of leftover chicken.

Serve with rice or chips and a little gravy.

Method

  1. Stir-fry the onion and mushrooms in 1 tbsp oil for 3 minutes. Add the chicken and beansprouts for 1 minute.
  2. Beat the eggs with the soy sauce.
  3. Add the rest of the oil to the pan and pour in the eggs. Cook until almost set.
  4. Fold over, cook for 1 minute and scatter with spring onions.
