Dry-frying gives the beans a wrinkled, slightly charred texture. They're full of flavour.

Serve as a side or with rice.

Method

  1. Fry the beans in the oil over a high heat for 6–8 minutes until blistered.
  2. Add the garlic, ginger and chillies for 1 minute.
  3. Add the soy and sugar and toss.
