'Uova in purgatorio' is a southern Italian dish. The chilli-spiked sauce represents the fires of purgatory.

Cook until the whites are set but the yolks are still runny.

Method

  1. Cook the garlic and chilli in the oil for 1 minute.
  2. Add the tomatoes and simmer for 10 minutes until thick. Season.
  3. Make 4 wells and crack in the eggs. Cover and cook for 5–7 minutes until the whites are set.
  4. Top with Parmesan and basil. Serve with bread.
