French Toast

Golden, crisp-edged French toast with a soft, custardy middle. A quick weekend breakfast that's lovely with berries and maple syrup.

French toast is best made with slightly stale, thick-cut bread, which soaks up the egg mixture without falling apart. Brioche or challah make it extra rich.

Cook it over a medium heat so the custard in the middle has time to set before the outside browns. A little butter in the pan gives crisp, golden edges.

Method

  1. Whisk the eggs, milk, sugar, vanilla and cinnamon in a shallow dish.
  2. Heat half the butter in a large frying pan over a medium heat.
  3. Dip two slices of bread into the egg mixture for 10 seconds each side.
  4. Fry for 2–3 minutes each side until golden and set. Repeat with the remaining butter and bread.
  5. Serve hot with berries and maple syrup.
