Hush puppies are quick to make and very moreish. They're crisp outside and soft inside.

Serve with butter or a dipping sauce.

Method

  1. Mix the cornmeal, flour, sugar, baking powder and salt.
  2. Stir in the egg, buttermilk and onion to make a thick batter.
  3. Heat the oil to 180°C.
  4. Drop in tablespoons of batter and fry for 3 minutes until golden. Drain and serve hot.
