A good meatloaf is moist and tender. Soaking breadcrumbs in milk before mixing is the secret.
Serve it hot with mashed potatoes, or cold in sandwiches the next day.

Method
- Heat the oven to 180°C / 160°C fan. Soak the breadcrumbs in the milk for 5 minutes.
- Mix the meat, soaked crumbs, onion, garlic, eggs, Worcestershire sauce, thyme and seasoning with your hands.
- Shape into a loaf on a lined baking tray.
- Mix the ketchup, sugar and vinegar and brush half over the loaf.
- Bake for 45 minutes, brush with the rest of the glaze and bake for 15 minutes more. Rest for 10 minutes before slicing.
