Salt and pepper chips are a British Chinese takeaway classic. Oven chips keep it easy, and the seasoning makes it.

Chinese five-spice gives the seasoning its warm flavour.

Method

  1. Heat the oven to 220°C / 200°C fan. Toss the chips in 2 tbsp oil and roast for 35–40 minutes until crisp.
  2. Mix the salt, five-spice, sugar and chilli flakes.
  3. Stir-fry the onion, pepper, chilli and garlic in the remaining oil in a wok for 3 minutes.
  4. Add the chips and seasoning and toss well. Scatter with spring onions.
