This is a popular starter in Chinese restaurants. The squid cooks in seconds, so it stays tender.

Scoring the squid helps it curl and crisp up.

Method

  1. Cut the squid open, score in a criss-cross pattern and cut into pieces. Pat dry.
  2. Mix the cornflour, flour, salt and pepper. Toss the squid in it.
  3. Fry in batches at 180°C for 1–2 minutes until crisp. Drain.
  4. Stir-fry the chilli, garlic and spring onions in 1 tbsp oil for 1 minute. Toss with the squid and serve.
