Soft, thin pancakes made with oats and yeast, a speciality of the Potteries. Fill with cheese, bacon or eggs.

These are nothing like Scottish oatcakes. They're soft and flexible, ideal for rolling up around a hot filling.

The batter needs an hour to rise, so start it before you want to eat.

Method

  1. Mix the oatmeal, flour, yeast, sugar and salt. Whisk in the milk and water to make a smooth batter.
  2. Cover and leave in a warm place for 1 hour until bubbly.
  3. Heat a lightly oiled frying pan and pour in a ladle of batter, swirling to make a thin pancake.
  4. Cook for 2–3 minutes each side until golden. Fill with cheese, bacon or eggs and roll up.
