Method

  1. Bring the stock to a simmer.
  2. Beat the eggs with the Parmesan, parsley and nutmeg.
  3. Slowly pour the egg into the stock, stirring gently with a fork.
  4. Simmer for 1 minute, add a squeeze of lemon and season.
