- Stir-fry the prawns in 1 tbsp oil for 2 minutes until pink. Remove.
- Stir-fry the vegetables in the rest of the oil for 3 minutes.
- Add the ketchup, vinegar, sugar and juice and bring to the boil.
- Thicken with the cornflour mixed with water. Add the pineapple and prawns and toss.
