Method

  1. Mix the buttermilk and hot sauce, add the chicken and marinate for at least 4 hours.
  2. Mix the flour, spices and salt. Lift the chicken from the buttermilk and dredge well in the flour, pressing it on.
  3. Heat the oil to 170°C in a deep pan.
  4. Fry in batches for 12–15 minutes, turning, until deep golden and cooked through.
  5. Drain on a rack and sprinkle with salt.
