Nashville hot chicken is famous for its heat. The spicy oil is brushed on straight after frying.

Adjust the cayenne to your taste.

Method

  1. Marinate the chicken in the buttermilk for at least 2 hours.
  2. Mix the flour, garlic powder and seasoning. Dredge the chicken.
  3. Fry at 170°C for 8–10 minutes until cooked through and crisp.
  4. Mix 150ml of the hot frying oil with the cayenne, sugar and paprika.
  5. Brush over the chicken and serve on white bread with pickles.
