These meat-free sausages have been made in Wales for centuries. They are crisp outside and soft and cheesy inside.

Chilling the mixture before shaping makes them much easier to handle.

Method

  1. Soften the leek in the butter for 5 minutes, then leave to cool.
  2. Mix the leek, cheese, 175g breadcrumbs, parsley, mustard and 2 eggs. Season and chill for 20 minutes.
  3. Shape into 8 sausages. Dip in beaten egg, then roll in the remaining breadcrumbs.
  4. Fry in the oil for 8–10 minutes, turning, until golden. Serve with salad and chutney.
Cook's noteMature Cheddar can be used if you can't find Caerphilly.
