Mississippi Mud Pie

A crunchy chocolate biscuit base with a rich, gooey chocolate filling and a thick layer of whipped cream.

This pie is named for the thick, dark mud of the Mississippi River. It's very rich, so small slices are enough.

It's best made a day ahead.

Method

  1. Heat the oven to 170°C / 150°C fan. Mix the biscuits and butter and press into a 23cm tin. Bake for 10 minutes.
  2. Melt the chocolate and butter. Whisk in the sugar, eggs and 150ml cream.
  3. Pour into the base and bake for 30 minutes until just set with a wobble. Cool and chill.
  4. Whip the topping cream and spread on top. Scatter with grated chocolate.
