- Toss the lamb in cornflour.
- Fry in batches in 2 tbsp oil until crisp. Remove.
- Stir-fry the onion, garlic and ginger in the rest of the oil for 2 minutes.
- Add the hoisin, soy and sugar and bubble. Toss in the lamb and spring onions.
