Method

  1. Heat the oil and cook the onion for 5 minutes.
  2. Add the peppers and garlic and cook for 15 minutes, stirring often.
  3. Add the tomatoes, cover and cook gently for 20 minutes until soft.
  4. Stir in the vinegar and basil and season.
